If you want them to converse to you in thai, first of all you must at least be able to hold a conversation with them.
All the thai girls can speak a bit of english and normally they speak english 1st or mandarin if they know. For me, they always ask me whats my name first etc, then I speak to them in thai, they then speak to me entirely in thai liao.

My ex "tirak" speaks to me in thai and only thai although she can speak decent english. She also understand my thai, so I think for simple conversation, I am ok. When I first met my ex "tirak", she spoke thai to me (even though she can speak english). She didnt know that I can understand simple thai. My current regular also cannot speak mandarin but only thai and simple english and I have a lot of fun with her.

For me, I find that those who can speak mandarin will tend not to speak thai with you even though you can speak thai (this group normally mandarin quite powderful liao). So the best is they dont know mandarin and only speak thai and simple english.
